Hidden Chocolate Cookies

The random number generator stayed in the Family Favorites section of the book with the Hidden Chocolate Cookies on p. 74. These deceiving cookies hold a minty chocolate candy inside.

The Hidden Chocolate Cookies are another fairly standard dough with creamed sugar and butter, add the egg and vanilla, and mix in the dry ingredients. This is then refrigerated to chill the dough so it can be shaped.

Once chilled, the dough is then taken by tablespoonfuls and used to enclose a “mint wafer candy.” I wasn’t sure what exactly the recipe meant by a mint wafer candy — I was thinking Andes mints, but unfortunately we couldn’t find them at the grocery store. Instead, I used mini Peppermint Patties, which were a great size for this and seemed to work well.

Then they’re baked, and you’re done!

Bottom line: The Hidden Chocolate Cookies were easy to make, with just a little fiddling to shape the cookies around the mint chocolate candy. The candy in the middle is a fun surprise, though I wasn’t convinced that I wouldn’t rather just have the candy and then the cookie separately. On the other hand, these disappeared pretty quickly!
