Stone Jar Molasses Cookies

The random number generator next took me to the Heritage section of the Family Favorites on page 82 of the cookbook with Stone Jar Molasses Cookies, roll-out chewy molasses cookies.

These start by boiling the molasses, then adding the shortening and then finally stirring in the rest of the ingredients. So, the unusual part is in the boiling of the molasses — I’m not sure I’ve done many recipes where you pre-cook one of the ingredients.

Then the dough is chilled so it can be rolled out and cut out later. I chose to make cute shapes when I rolled these out, but they could just be simple squares or rectangles, of course. Then they’re baked and cooled.

Then ended up to be a little puffy, making them pleasantly chewy with the sweet molasses flavor.

Bottom line: The Stone Jar Molasses Cookies, while fairly easy, were a bit more work than I would like for a simple molasses cookie. They were chewy and tasty, but I could get that with a simpler drop cookie.
