Chocolate Nut Wafers

Next up from the random number generator were Chocolate Nut Wafers on p. 130 in the Company-Best section of the cookbook. These were chewy, chocolaty cookies.

These were another fairly traditional cookie to make. Cream the butter, sugar, eggs, and vanilla. Add in melted baking chocolate. Mix the other dry ingredients separately, and then blend into the butter mixture.

The cookies are dropped by spoonfuls on a cookie sheet. Then they are pressed with the bottom of a sugar-coated glass, and baked for 8 minutes.

These came out thin, crunchy, chocolaty and nutty. They were easy to make and tasty.

Bottom line: These are thin, crispy cookies with a touch of chocolate and crunch from the nuts. I’m not sure there’s much that make them stand out from all the other cookies I’ve been making, but I wouldn’t shy away from making them again
