Banana Bars

I had to jump ahead of the random number generator because I had bananas on-hand and had to use them while they were still ripe! So I skipped over one (back to it next time) to the Banana Bars on p. 92 in the Family Favorites section. These were delightfully easy and surprisingly flavorful, given that they were under the “for bland diets” header.

These bars were so simple that I forgot to take any pictures! Basically mix things in the right order (sugar and butter first, add eggs, vanilla, baking powder, salt, then mix in mashed-up bananas and chopped nuts). Put in a pan and bake.

The only additional step is to glaze it once the bars have cooled off.

They were fast and easy. I didn’t have high expectations for how they would taste, since they were under the “bland diets” section of the board. However, the banana flavor came through and the addition of the optional nuts added a bit of flavor and crunch.

Bottom line: Flavorful bars with a bit of sweetness. We were pleasantly surprised how much flavor was in them since they were intended for people who need bland diets. I probably still prefer making banana bread, but this wasn’t a bad alternative.
