Chocolate Fruit Bars

The random number generator kept me in the Cooky Primer with the Chocolate Fruit Bars on p. 14 of the Cooky Book. These bars are chockfull of chocolate chips, cherries, and raisins.

These bars were super-simple to make. The hardest part was chopping up the maraschino cherries! The eggs, sugar, and vanillia were mixed together, then the dry ingredients added — flour, baking powder, and salt. Finally the raisins (or dates if you’d prefer), cherries, chocolate chips, and walnuts are mixed in.

The dough is spread into a greased 13×9″ cake pan and baked. That’s it! You could dust it with powdered sugar if you wanted, but I didn’t think it needed it.

They were super-simple — one of the fastest recipes in the book so far. The bars came out moist and tasty.

Bottom line: These were moist bars with sweetness of maraschino cherries, the light bitterness of chocolate chips, and crunch of walnuts. They were quick and simple, and we finished the pan embarrassingly quickly. I would absolutely make them again.
