Angel Sandwiches

Next were some Teatime Cookies: Angel Sandwiches from p113 in The Cooky Book. (Actually, I was supposed to do these a couple weeks ago, but I had missed the “Sweetened Whipped Cream Topping” as an ingredient when I made the grocery list. So, I didn’t have the whipping cream on hand to make these.)

These bars have a layer of crust on the bottom, date and raisin filling in the middle, and whipped cream topping.

The bottom crust is made from flour, powdered sugar, and butter. This is mixed together and pressed in the bottom of a lightly greased pan and baked.

Meanwhile, the dates and raisin layer is cooked together with sugar and water until the dates and raisins are soft and the mixture is thickened. Once the mixture has cooled, it is spread on the baked (and cooled) crust.

Finally, whip up the sweetened whipped cream, and this is added to the top of the date and raisin mixture.

These were okay. The crust was good, the filling was better than I expected, and the whipped cream was yummy. However, there are a number of other bars I would rather have. Besides which, these required a fork to eat — I’m usually looking for a “cooky” to be finger food!

Bottom line: These were tasty with a sweet date and raisin gooey center topped with whipped cream. However, there wasn’t much texture beyond “gooey”, and they were hard to remove from the pan.
